Meat-free Meals – Try these Tasty Veggie Recipes


Meat-free meals to make vegetarian food delicious.

We have got some of the easiest and nicest meat-free dinner recipes that can be made in as little as thirty minutes. We all know that the last thing you want to do when you get home from work is stand around for ages, preparing and cooking a meal, so these examples are absolutely fantastic and are designed for a busy lifestyle.

Please note, that although all of these recipes are meat-free, not all of them are vegan-friendly, so please check the ingredients or adapt them prior to cooking.

Mac and Cheese:

Macaroni cheese is such as classic, warming, comforting dish, but some can take a long time to make. This take on this American favourite can be made on your hob and is ready in just fifteen minutes!


  • 8oz dry pasta
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 ¼ cups milk that has been heated
  • 1 cup of grated cheese
  • Salt
  • Pepper


Start by cooking your pasta in a large pan, according to the directions that are printed on the packet. Once this is cooking, you can melt the butter over a medium heat, in a medium-sized pan. Once it has completely melted, add the flour before whisking thoroughly. Continue to whisk and cook this mixture for a further six minutes, or until it appears that the mixture has darkened slightly.

Pour ½ cup of the milk into the saucepan, and whisk vigorously in order to break up the butter and the flour mixture. Once combined, add the rest of the milk and continue to whilst the mixture. Continue cooking until the sauce has thickened.

Once thick, reduce to a low heat, and mix in the grated cheese of your choice. Gently stir this in until all of the cheese has completely melted, before removing from the heat and pouring over the pasta. Mix well, and add salt and pepper to taste.

Vegetable Lo Mein:

This is a great alternative to getting a Chinese takeaway. Not only does it taste great, but it is also much cheaper to make yourself, and can be made in as little as fifteen minutes! That’s quicker than a takeaway too!


  • 8oz lo mein egg noodles
  • 1 tbsp olive oil
  • 2 cloves of garlic, minced
  • 2 cups of sliced cremini mushrooms
  • 1 red pepper, julienned
  • 1 carrot, julienned
  • ½ cup snow peas
  • 3 cups baby spinach


  • 2 tbsp reduced-salt soy sauce
  • 2 tsp sugar
  • 1 tsp sesame oil
  • ½ tsp ground ginger
  • ½ tsp Sriracha


Whisk together the soy sauce, sugar, sesame oil, ginger and Sriracha into a small bowl, before setting aside. Cook the noodles according to the instructions in a large saucepan, before draining well.

In a large frying pan, over a medium high heat, heat the olive oil, before adding the garlic, mushrooms, bell pepper and carrot. Stir frequently for about 3-4 minutes, until the vegetables are tender. Stir in the snow peas and spinach and cook further until the spinach has completely wilted.

Stir in the noodles, and the soy sauce dressing, and gently toss all of the ingredients together, before serving immediately.

Double Bean Burgers:

Make sure you never miss out on juicy burgers again, with this delicious recipe which is incredibly quick and easy to make!


  • 1 can black beans that have been rinsed and drained
  • 1 can cannellini beans, rinsed and drained
  • 1 large egg, and 1 egg white, lightly beaten
  • ½ cup breadcrumbs
  • 3 tbsp olive oil
  • 3 tbsp fresh cilantro, chopped
  • 4 cloves of garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 6 whole grain buns


Using a standard potato masher, in a large bowl, mash the beans together. Add the cilantro, garlic, paprika, onion powder, salt and pepper, and mix well to combine.

In a smaller bowl, beat the eggs lightly, and add 1tbsp olive and breadcrumbs, mixing together well. Add this mixture to the beans, and mix thoroughly to combine, bringing it together with your hands. Separate this mixture into 6 equal portions and form patties.

Heat 1 tablespoon of olive oil in a large frying pan over a medium-high heat, and add the burgers. Cook on each side for about five minutes or until they are golden. Remove and serve on buttered whole wheat buns.

Chickpea Curry:

This chickpea curry can be ready in as little as thirty minutes and is far healthier, cheaper and quicker than a takeaway. Find out how to make this yummy recipe below.


  • 1 cup of mange tout, sliced across
  • ½ white onion, diced
  • 1 large carrot that is peeled and thinly sliced
  • ½ red pepper, thinly sliced
  • 2 tsp oil
  • 2 tsp garlic, minced
  • 2 cans of coconut milk
  • 3 tbsp red curry paste
  • The juice of 1 lime
  • 1 can chickpeas
  • 1 tsp yellow curry powder
  • ½ tsp garlic salt
  • 1 tsp salt
  • ¼ cup cilantro, chopped
  • Cooked white rice


This recipe is so simple to make. Start by adding the snow peas, onions, carrots, red peppers and oil to a large saucepan or frying pan, and saute for 5-6 minutes over a medium-high heat, or until the vegetables become tender. Add the garlic and cook for a further minute.

Next, all you have to do is add the coconut milk, red curry paste, lime juice, yellow curry powder, chickpeas, garlic salt, and salt, and continue to cook for a further five minutes, or until the chickpeas are heated through. Keep this stirring as it cooks. Finally, stir in the cilantro, and season to taste.

Serve over cooked white rice, and enjoy!
